Sweet Potato Crisps

In the months of August and September, I have become obsessed with sweet potatoes. I have no idea where it cam from, but I cannot get enough of them! I have been baking, cooking, and experimenting with them a ton! I found this recipe on Pinterest and tried it out...um...YUM! I was very pleasantly surprised! The only bad thing about this recipe was trying to grate the sweet potato. The grater I am using right now is not great...(ha), so that was kind of miserable. I'm sure if I had a nicer one it would have been a much easier process. Here's the recipe and a photo!!


Cheesy Sweet Potato Crisps
Ingredients:
  • 2 sweet potatoes
  • 1/2 cup liquid egg whites
  • 1 cup Parmesan cheese
  • 1/2 teaspoon rosemary
  • 1/4 teaspoon pepper
Directions:
  1. Preheat oven to 425. Set a wire rack on top of a baking sheet. Spray rack with non-stick spray.
  2. Peal sweet potatoes. Grate sweet potatoes and then squeeze the moisture from them. (I just used my hands to press out the liquid.) The more moisture you remove, the crispier they get in the oven.
  3.  To the grated sweet potatoes, add the egg whites, cheese, pepper, and rosemary. Mix until combined.
  4. Scoop out potato mixture and set on wire rack. (I used an ice cream scoop.)
  5. Press sweet potato mixture as thin as possible. Repeat until potatoes are gone.
  6. Bake for 25-30 minutes or until potatoes are dark around the edges and crispy.
